buying US Visa at Istanbul airport
I have been told that US citizens need a travel visa to enter Turkey, but you just buy it at the airport at a kiosk next to customs. We will be arriving very late (midnight) and I fear the office won't be open. Anyone buy their visa late into the night? Was there a delay?

Please verify, but at any time the passport control area is manned, the visa desk is manned. The process really is no more than fork over your $25 (or whatever it is currently) in US funds or Euros and get your "visa"
The visa stamp costs $20 and be sure to bring exact US currency for this. There is definitely someone manning the desk whenever there is a plane arriving regardless of the time of day or night.
