There are a million of things to see in Dublin! I would suggest the hop-on, hop-off bus tour to get a general look around. You really should see Kilmainham Gaol to learn about the Irish war for independence. Grafton St. is fun to walk down, and there are always musicians along the way. You might also enjoy the tour at 29 Georgian House, at 29 Fitzwilliam St., a tour of a Georgian home built in the 1700's. The National Museum has a large collection of ancient gold jewelry and ornaments, including the Tara Brooch. You might also want to see the Book of Kells at the Trinity College library.

I really enjoyed the walking tour that I took with a Trinity College history grad student. She was a fantastic guide and I learned a ton about Irish history. Below is the website with info about their tours.
