EasyJet - when to buy?

Daughter and I will be flying EasyJet from Sicily/CTA to Paris in late May. I just looked at the flight and it's almost empty - only half a dozen seats booked. I know fares rise as the time gets closer, but does that also depend on how full the flight is? We don't have all the trip details nailed down yet; I could buy now if needed but would be happy to wait a few weeks. Also, any advice on seats? I like Economy Plus in United for long flights and wonder if the XL seats are worth an extra $15. I'm fairly tall. And finally, is the Flexi ticket worth it, or should I just price out the various parts and do the math myself? We will be checking a bag and reserving seats. Thanks for any advice!

The price goes up automatically as the plane fills up. Should a school group of 20 kids purchase ticket at once, the airfare could double or triple instantly. For the lowest price it's essential to purchase ASAP. The XL seats are usually the seats in the first row or the emergency rows. I'm tall so for me the extra $15 is worth it.

I was looking for flights from Venice to Paris Orly on 3 May this afternoon and within about 40 minutes, the price went up $3.50 per person, so I purchased the tickets. This is our first flight on EasyJet, but their price was MUCH cheaper than SAS, Lufthansa or Airfrance and we can land @ Orly which is a much shorter taxi ride to our rental apartment. I didn't check Ryanair after reading so many negative posts about them.
