Travel in Spain is intensely experiential. Every time I return there, I have a ritual: I pop into a rustic eatery and order a ham sandwich. I feel I haven't really arrived until my teeth creak through the crisp crust, into the fluffy fresh baguette, and hit...jamon.
In Spain, the ham (from happy, acorn-fed pigs) is an example of the rustic intensity of the culture you'll experience. Cured ham hocks, toned legs with pointed toes — looking like farmyard ballerinas — hang from the ceiling in every traditional bar. With that first sandwich, my traveling spirit does a little leap, and I think, "Yes, welcome to España!"
On each of our tours through Spain and Portugal, the meals are designed to get you literally sinking your teeth into the local culture. In the Basque Country — famous for its cuisine — we share a sumptuous dinner at a members-only gastronomical society. In Madrid, we taste an amazing variety of cured meats, spicy peppers and homemade sauces. In Granada, we dine outdoors (overlooking a panorama of city lights) on gazpacho, tangy goat cheese salad, steak marinated in orange and curry — and even more, as the evening goes on.
